    Crepes were originally from Italy as seen in a crespelle. It was brought to France by Catherine de Medici, Jambalaya is a Creole version of Spain's paella. Gumbo is of African origin via the Carribean and brought to the New Orleans area by slave cooks. Gumbo is a variation of a West African word for okra. The Creoles and Cajun then tweaked it to suit what they liked and what was readily available during a specific season. I am a chef from New Orleans so I should know.

    Jambalaya and Gumbo are Cajun and from the American State of Louisiana
