    『義大利啤酒條麵包』

    Grissin Bread

    >材料

    >Ingredients:

    高筋麵粉 White flour...400g

    新鮮酵母 Fresh yeast...10g

    改良劑 S-500...5g

    水 water...250g

    低筋麵粉 cake flour...100g

    瑪琪琳 margarine...150g

    細鹽 salt...9g

    新鮮酵母 fresh yeast...15g

    黑芝麻 black sesame...20g

    帕瑪森起士粉 parmesan cheese grand

    ...20g

    >作法

    >Method:

    1.高筋麵粉、酵母、改良劑、水一起攪

    拌至成糰達到擴展階段,進發酵箱,發

    酵至少30~40分鐘。

    1.Mix together white flour,yeast,

    S-500 and water.Let rise for at

    least 30~40 minutes.

    2.將發酵好的麵糰放入攪拌缸,加入低

    筋麵粉、瑪琪琳、鹽、酵母攪拌至麵糰

    稍光滑。

    2.Put the dough in the mixing

    bowl,add cake flour,margarine,

    salt,and yeast.Mix until smooth.

    3.將麵糰分成兩個,分別各加入黑芝麻

    一糰,帕瑪森起士麵糰一糰。

    3.Divide the dough in half.Add

    black sesame in one,and parmesan

    cheese in another.

    4.分別把麵糰擀壓摺疊至成為長方塊,

    厚度約1~1.5公分,再冰至冷凍庫,冰

    硬。

    4.Roll out the dough and fold it

    into rectangular shape,about 1~

    1.5 cm thick.Put in freeeezer.

    5.然後取出切成1~1.5公分寬的長方條

    5.Cut the frozen dough into 1~

    1.5 cm wide rec-tangular stripes.

    6.再整型成螺旋狀長條,排列於烤盤上

    間隔約1~1.5公分的距離。

    6.Twist the rectangular stripes

    and line them up on a baking pan

    with about 1~1.5 cm in between

    stripes.

    7.進發酵箱稍發酵膨脹,再進烤箱以上

    火180℃/下火160℃烤至金黃色即可。

    7.Let rise. Bake at 180℃(top)and

    160℃(bottom)until golden brown.
