Your fear of mice is irrational. Trust me on this, as much as you fear them, they fear you too. They are nothing more than rodents, mammals. They search for food for the purpose of sustaining life, and they make little meeses for the purpose of perpetuating the species.
They won't hurt you, but you are likely to injure yourself jumping on things. As a matter of fact, I have captured a couple mice with my bare hands. They ARE fast, but if you are faster you can catch them. I had the habit of catch and release elsewhere. I don't like hurting animals just because I don't like them.
Funny story about climbing on things: One afternoon a Tarantula walked into my dining room. The sliding back door was open and it just decided to come in and say hello. My wife jumped on the chair, jumped on the table, there was nothing left to go up on and she was still going up. I thought she was going to climb onto the chandelier. "KILL IT - KILL IT" she screamed. I laughed, got a box and chased the spider into the box, then took it outside, across the street and released it.
There is no reason to fear such small creatures unless they have poison. Mice are not poisonous. Go to a pet store and look at the mice. Get accustomed to looking at them. See that they are animals similar to cats and dogs. I hope you don't fear those animals. Eventually you will see them as pests in the house that need to be gotten rid of, but you won't have the same fear.
And like OMG, like drop the Valley Girl thing. If you want to trap them in a humane way, get a small pail and tape a piece of paper across the top so that it doesn't fall in on its own weight. Put peanut butter on the paper and have it rigged so that the weight of the mouse will make the paper drop him into the pail. Be sure to have a tall pail, otherwise it can jump back out. Since the mouse can't jump that high, you will have to construct a staircase, likely out of small boxes so the mouse can get up to the trap. Smearing peanut butter will attract the mouse. When it has licked up all the peanut butter from one step, he will find the smell of the next box, leap up and eat that. When that is gone he will go up on top of the trap and fall in. Once you've captured him, take him somewhere outside where he won't find his way back into the house and release him.
Reset the trap and you will catch all the mice in the house. Just be sure you have a lid for the pail so you don't get frightened by him jumping - trying to escape.
