Boiling Dandelion green and nutrition?
Would excessively boiling dandelion greens (to get the bitterness out) ruin its nutritional value?

cooking anything longer will deplete some of the nutrition also depends on what you do with the water which will include some of the dissolved minerals. I would suggest using a sweetener, and also use commercial grown dandelion grown for greens rather than lawn variety.
