Channa Masala! I don't have a recipe, I make it as I go along. Google it online! I like to add ginger to the mix, and plain yogurt at the end.
Toasted guacamole sandwiches are my favorite, especially with caramelized onions in it! Just slab the onions and guac in between two pieces of whole grain bread, and toast on a pan. Yum!
Crock pot root vegetables!!! Just throw some olive oil into the bottom of a crock pot, chop up some veggies (potatoes, carrots, rutabaga, parsnips, winter squash, etc), throw in with some salt, rosemary, basil, black pepper, fresh parsley, sliced onions (or pearl onions - even better!), and cook all day while you're at work.
My favorite salad is romain lettuce, avocado, chickpeas, cukes, sliced sweet peppers and red onions, tossed with olive oil and lemon juice.
Stuffed acorn squash: Cut in half an acorn squash, half-bake it, stuff with a mixture of brown rice, reconstituted raisins, almonds, olive oil/butter/margarine, and diced and half-baked sweet potato. Bake some more. A dash of cinnamon doesn't hurt, either! Might need salt when it comes out.
Hummus! Look it up. Super simple!
Turlu!!! It's a Turkish eggplant casserole. Eggplant is a MUST in this recipe. It makes it super creamy! Google "Turlu", "Turlu turlu," or "Guvec." Use vegetarian versions, though traditionally it is a vegetarian recipe.
Massaman curry is arguably my favorite Thai curry. It also tastes good with sweet potatoes and butternut squash pieces thrown in, for fun! You can find tons of recipes online.
Also, kale chips!!! Perfect for when you're watching TV and need something to munch on! They are super easy to make, and SO GOOD. You only need a minimum of three ingredients!

This is a great Thanksgiving pumpkin pie recipe. You cannot taste the tofu at all, because there's twice as much pumpkin as most other vegan recipes!
Aloo gobi is delicious! I don't usually look at a recipe when I make it. The thing with curry is that you don't need precise measurements of anything - it's all to taste! Just Google any basic recipe and you'll get the hang of it.
I'm a big fan of split pea soup! Sautee some onions and garlic; set aside. Boil pre-soaked split peas, add the onions and garlic, let it simmer for a while. Add salt, "Simon and Garfunkel spices" (i.e. parsley, sage, rosemary, and thyme) black pepper, and continue to cook until done. Near the end of the cooking, add some chopped fresh mint for a fresh kick. Tastes great with the big bread recipe I gave you!
I'm a huge fan of cupcakes. Tiramisu cupcakes FTW! Get the book "Vegan Cupcakes Take Over The World." All the cupcakes in there are AMAZING, but the one mentioned above is PHENOMENAL. And they are so much fun to make!
This is an easy veggie pot pie. I prefer not to use tofu, and just sub potatoes to thicken it.

The icing recipe is a little complicated, and I just use powdered sugar, vanilla extract, almond extract (optional), a little soymilk, and mix it all together. I color it with things like beet juice, lemon rind, orange rind, spinach juice (from ground spinach - use the ground spinach for a pesto) to color it. I avoid food coloring when I can.
Peach cobbler! Any recipe will do. I love making it with an oatmeal crust, with pecans.

This is a great white bean soup! I like to make my own veggie broth, but you can buy some at the store, or use a veggie bouillon cube. Also, I like to blend half of it when I'm done cooking it, and add that blended amount to the normally cooked amount. It's extra creamy. Also, use a sweeter white wine; not a dry one.
Lentil soup! Make the soup like you would with the pea soup, but instead, add a dash of cumin while you're toasting the onions. Also, a bay leaf wouldn't hurt. I also like to add a diced potato. Yum!
