Don't worry, your not alone in your opinion of hagglers or 'asda price' men in Egypt :)
I can strongly recommend Cyprus to you. Mainly the West side e.g. Paphos.
The Greek Cypriots are so friendly and I have never had to haggle for anything, like you say, the price you see is the price you pay. That and the fact that there is less than 3% crime in Cyprus and we have an army base on the East side, is probably the reason we have such a big Ex Pat community there - It is the only place I have been to where I have seen an elderly lady walking at midnight alone saying how safe she feels.
As for things to do there. Well, Kato, Paphos is the harbour town that has a beautiful Fort that goes into the sea with fish and meze restaurants along the promenade. By day it is great to venture out in a car (they drive on the same side as the UK) and explore Troodos mountains, the tombs of the kings for a bit of history or just go to the shops in the old town. Coral Bay is just down the road and has a nice beach there. Alternatively there is a waterpark in Paphos for your daughter. But maybe she prefers the shopping?
