What makes cheese strings stringy?

What makes cheese strings stringy, it doesn't say any ingrediants on the back it just says 100% cheese?

    All string cheese has the proteins to string, I have had Middle Eastern ones from Syria and Lebanon, the processed ones are extruded in a way asto flatten the strands, so when you pull on them the tear into strings, others its the way they stretch and mold them that make them stringy and feather like.

    Mozarello when cooked is a stringy cheese so mix with cheddar and basically you have it.
