How do you make toffee?

Welllll, I feel like making toffee, and I do know how, but the last 5 times or so it has failed epically. So, if anyone can provide a recipe for toffee, I would appreciated it muchly. :)

    Hi Abbie!

    Toffee is my favorite candy, so you're making me hungry! I'm sorry you're had problems with your toffee. Do you have a candy thermometer? You can't make good toffee without one. Here are some excellent recipes for toffee, which were rated 5 stars by cooks who made them. I'm giving you three recipes so you can choose which one you want to make.

    BEST TOFFEE EVER -- SUPER EASY RECIPE

    2 cups butter

    2 cups white sugar

    1/4 teaspoon salt

    2 cups semisweet chocolate chips

    1 cup finely chopped nuts

    In a large heavy bottomed saucepan, combine the butter, sugar and salt. Cook over medium heat, stirring until the butter is melted. Allow to come to a boil, and cook until the mixture becomes a dark amber color, and the temperature has reached 285 degrees F (137 degrees C). Stir occasionally. While the toffee is cooking, cover a large baking sheet with aluminum foil or parchment paper. As soon as the toffee reaches the proper temperature, pour it out onto the prepared baking sheet. Sprinkle the chocolate over the top, and let it set for a minute or two to soften. Spread the chocolate into a thin even layer once it is melted.

    Sprinkle the nuts over the chocolate, and press in slightly. Putting a plastic bag over your hand will minimize the mess.

    Place the toffee in the refrigerator to chill until set. Break into pieces, and store in an airtight container. Makes 32 pieces.

    MELT IN YOUR MOUTH TOFFEE

    1 pound butter

    1 cup white sugar

    1 cup packed brown sugar

    1 cup chopped walnuts

    2 cups semisweet chocolate chips

    In a heavy saucepan, combine butter, white sugar, and brown sugar. Cook over medium heat, stirring constantly until mixture boils. Boil to brittle stage, 300 degrees F (150 degrees C) without stirring. Remove from heat. Pour nuts and chocolate chips into a 9x13 inch dish. Pour hot mixture over the nuts and chocolate. Let the mixture cool and break it into pieces before serving. Makes 48 pieces.

    EASY TOFFEE CRUNCH WITH NUTS

    1 1/2 cups milk chocolate chips

    1/2 cup white sugar

    1/2 cup butter (no substitutes)

    1 1/2 cups chopped pecans, almonds, walnuts, hazelnuts, peanuts or your favorite

    2 tablespoons light corn syrup

    Line a 9 inch square pan with enough aluminum foil to extend a little past the edges, and butter the foil. Place chocolate chips in a glass bowl, and cook in the microwave, stirring every 20 to 30 seconds until melted and smooth. Spread the melted chocolate in the bottom of the prepared pan. Set aside in the refrigerator to cool while you make the candy part. In a small saucepan over medium heat, combine the sugar, butter, nuts and corn syrup. Bring to a boil, stirring to blend as the butter melts. Heat the mixture to 250 to 265 degrees F (121 to 129 degrees C), or until a small amount of syrup dropped into cold water forms a rigid ball. Pour over the cooled chocolate, and spread into an even layer. Return to the refrigerator to cool. When completely cool, break into bite size pieces, and store in an airtight container. Makes 32 pieces.

Spread the chocolate into a thin even layer once it is melted. Sprinkle the nuts over the chocolate, and press in slightly. Putting a plastic bag over your hand will minimize the mess.

    4. Place the toffee in the refrigerator to chill until set. Break into pieces, and store in an airtight container.
