Some species of grasshopper are capable of producing a foul smelling substance from glands near the mouth, which puts off predators, and tastes so vile that the grasshopper is often dropped without damage.
Camouflage is, as stated, one of the principal protections however, but grasshoppers are capable of a violent kick which is often enough to startle a predator sufficiently to enable the grasshopper to jump to a safe distance.
The jump is also a good defence, as it happens so quickly, it is difficult to determine in which direction and distance which the insect jumped.

Grasshoppers potect itself by the color of their body. Most of the grasshoppers are the same color as the grass. If they do not move, they won't be seen.

Most grass hoppers protect themselves with camouflage. They are the same color as their surroundings. The lubber grass hopper is brown in color. But it tastes terrible. So animals do not eat it.
