Usually stay on at uni and become a fellow or researcher. Or go on to some private company and research. Geography side to Astronomy. But, usually, you become a teacher, or researcher.
Or, a super science fellow. Or, become a mathematician/Physicist.

Where's Eri? She's a real one.
Meanwhile have a read of this...what astronomers do in observatories, under the group of links about telescopes....from where it reads..."The way into space research....."
You don't have to join an observatory.
You can teach, do outreach work, be a theorist, write books, all sorts.
Here are two from Eri....hope Eri doesn't mind.
