Equal parts butter and flour (3/4 cup each, 1/2 cup each, etc.) Melt butter over medium high heat. For more flavor, heat until the butter starts to color. Sprinkle in the flour, a little at a time, stirring constantly. Keep stirring until the flour turns a chocolate brown color (pretty dark). It's just equal parts of flour and fat (oil/butter). Cooked until browned. You have to constantly stir it while cooking and the darker your roux the darker your gumbo will be. Most gumbos use a peanut butter colored roux.
Usually you make the roux first, then add chopped onion, green pepper, celery to the roux. Saute for a few minutes add your meats, cook until done then add broth or stock.
