Why do the sausages on a pizza taste kinda like licorice?

Has anyone else noticed this?

There's like a licorice-y flavor to them and only sausages on pizzas.

    Most sausages contain fennel seeds which has a licorice flavor.

    Fennal is one of the main spices used in italian sausage, and that's what you're tasting, as it has a licorice/anise flavor to it. I often add a little ground fennel when I'm making tomato sauce to give it the flavor of sausage without using sausage. Here's a little more info about it:
