If you need to use a specific example, one out of many, than maybe your best bet would be her 2001 album 'I am...'. Ayu already had a full concept on the album, she had the covers planned out, the set almost ready, costumes and make-up were decided, but the 9/11 attacks changed her mind on anything. She knew it wasn't the right time to release what she had in mind, to have an image so done up and such. So the cover of I am... was changed to that of a peace muse. A woman clad in vines, with a simple white dove on her shoulder to represent world peace.
When originally released (before 9/11), the song Endless Sorrow had a very sad lonely feel to it, despite having lyrics that were somewhat hopeful. For the I am..., the song was re-arranged and given a bit more of a positive feel.
The song 'a song is born' was written in aid of those who lost friends and family in the attacks. A Song is born was originally released as a single, as a duet with another singer on her label; all money earned from that single went to raise funds to help victims of the attacks. A touching solo version was put on I am... and she performed a beautiful orchestra version of the song at World Expo.
These small things alone make people realize just the sort of impact she has. She's loved because she's human, and she brings her feelings to the surface, and she acts in the right way. She knows the appropriate time for things, she knows that what she says and does has an impact, and so she sees it as her chance to do the right thing.
There's loads more of this; I guarantee if you go on the forums and ask for quotes and little bits here and there you'll definitely be able to pull something together.
