united states department of agriculture.....lean means little to no fat, trimmed means the fat has been removed or trimmed off. A good steak needs a little fat and bone for flavor. Like a t bone or a ribeye...A sirloin is a lean steak....but has little flavor and can be easily overcooked and tough.
