The University of San Fransisco offers courses in English. This is a popular university choice for U.S. college students studying abroad in Ecuador. It's located in Cumbaya, a suburb that lies just outside of Quito, making it great for avoiding the bustle of the city but still having proximity to the capital city for entertainment, excursions, etc.
As a travel guide with its headquarters in Quito, Ecuador, VIVA Travel Guides is both a website and a guidebook publisher -- it has tons of insider information regarding Quito and Cumbaya.

It has been a few years but I went to school in Quito Ecuador. I can really only speak for two universities that I attended. One is Unversidad Catolica and the other is USFQ ( Universidad San Francisco de Quito). The first I know for a fact has language programs but as far as classes being held in English...not so much. All classes I took and that I saw were in Spanish. That may have changed over these years. Now USFQ does offer classes in English. I Graduated at USFQ and took about 40% of my course work in English. This university has a lot of exchange students of which most were there to be submerged in Spanish. Some would even stay with spanish only speaking families to learn quicker. The history and art classes were a great way to get to see and learn about the city, its churches etc... Not to get too far off topic from your question, look up USFQ ( Universidad San Francisco de Quito) I believe the web page has an english option.
Hope this helps.
