vegweb.com has a ton of great recipes. I also like fatfreevegan.com.
One simple recipe I made up is to simply spray a saute pan with Pam, cube some firm tofu, and cook it on medium heat with spices (i usually just use McCormick's montreal chicken seasoning, which does not have any chicken or animal products in it) until it starts to brown. Then I add zucchini slices, chopped onion, mushroom slices, carrot slices, black olives, or any other veg I fancy (but usually just zucchini my favorite). I like to undercook my zucchini so I never cook it much longer, but just cook as much as you want (maybe with some more spices). Fast, easy, yummy, low-calorie dinner =)Source(s): Vegan for 5 years

spectacular! i am going Vegan for lent. you ought to hit me up if she might % to talk, because it may be large to experience like i became doing this with somebody! final time i became vegan for lent my boyfriend made me a terrific V-J Day dinner. various vegetables marinanted in an italian dressing kind sauce then grilled on the grill. spectacular mashed potatoes may be made with potatoes, soy milk, vegan butter, and a splash brags amino acids. i'm giving up sugar as properly, yet with vegan butter and egg replacer you may make some spectacular brownies/cookies!

I agree: www.vegweb.com is a GREAT resource! www.recipezaar.com also has some vegan recipes, although it's not a vegan site.
Keep in mind that it's prety easy to veganize some recipes--vegetable broth for chicken broth, mushroom broth for beef, soy milk for cows' milk, egg replacers, etc.

slice and extra firm tofu as thin as possible and lay the pieces on a non stick pan
add soy sauce, garlic powder or whatever spices you like.
heat in oven (350) until they brown.
flip on other side & do the same.
Eat hot or cold.
