    Healthy Choices meals are me and my mom's favorites. Try their cafe steamers they are delicious and they have all types of flavors. My favorite is the Chicken Red Pepper Alfredo cafe steamer it has these juicy chicken slices and soft noodles along with a tasty cheese sauce, a couple of slices of red peppers but it's not actually hot just a tad spicy, and a few florets of broccoli. It is Delicious! Healthy choice also makes pizzas and complete meals with dessert. There sometimes a light high priced at some stores but to be fair most healthy foods are.     Cheesy Chicken Pitas

    1 c. red, green, yellow bell pepper strips

    1 sm. onion, sliced

    1 clove garlic, minced

    1 1/4 lbs. boneless, skinless chicken

    breast, cut in strips

    2 whole wheat pitas, cut in half

    4 slices cheese (your choice), cut in

    half diagonally

    Lettuce

    Ive tried all of these and they are very good.

    1/2 c. sour cream

    Toss peppers and onions together in bowl. Set aside. Spray small frying pan with non-stick cooking spray, cook garlic and chicken strips until thoroughly heated. For each pita half, fill with layer of chicken, 2 slices of cheese and 1/4 cup pepper mixture. Cover loosely. Microwave on High 30 seconds or until cheese is slightly melted. Add lettuce, serve with sour cream. Serves 4

    Baked Apples

    2 baking apples (Mac's)

    1 tbsp. brown sugar

    1/2 tbsp. butter

    Core apples. Place sugar and butter in cavities. Set in custard cup or baking dish. Cover (wax paper for crunch - or - plastic for soft). Microwave on high power (2 apples) 2 1/2-4 minutes. Micro-cook until fork tender, rotating after 1/2 cooking time. Let stand 2 minutes. Serves 2.

    SHRIMP CREOLE

    4 green onions, thinly sliced

    1/4 c. celery, chopped

    1/2 c. green pepper, chopped

    2 tbsp. butter or margarine

    1 clove garlic, minced

    1 (16 oz.) can whole tomatoes, drained and chopped

    1 (6 oz.) can tomato paste

    1 tsp. salt

    2 tsp. dried parsley flakes

    1/4 tsp. cayenne pepper

    1 (10 oz.) pkg. frozen cooked shrimp, thawed

    In a 2 quart micro-proof casserole, combine green onions, celery, green pepper, butter and garlic. Cook covered on High 3 minutes, or until green onions are transparent. Stir in remaining ingredients. Cook, covered on 80 reheat 5 minutes. Stir cook, covered on 80 reheat 6 to 7 minutes, or until hot. Let stand, covered, 5 minutes before serving over hot cooked rice. 4 to 6 servings.

    Orange Ginger Tuna Salad

    INGREDIENTS

    * 1 (6 ounce) can tuna, drained

    * 1 orange, peeled, sectioned, and cut into bite-size pieces

    * 1 1/2 tablespoons mayonnaise

    * 2 tablespoons cashew halves

    * 1 teaspoon ground ginger

    * 1 teaspoon lemon juice

    * salt and pepper to taste

    * 6 leaves fresh spinach

    1. In a medium bowl combine the tuna, orange pieces, mayonnaise, cashews, ginger, lemon juice and salt and pepper to taste. Mix well. Serve over a bed of spinach or lettuce leaves.
