Seafood au Gratin
Ingredients : 1 lb spinach
8 oz fish fillet
4 oz crab meat
4 oz scallops
4 oz shrimps
4 oz squid
1 cup of mashed potatoes
125 ml white wine
350 ml cheese sauce
1 oz cheese powder
Method : (1) Clean & cut fish into squares; Clean and cut squid to
thinly slice; Defrost scallops; Clean, peel and remove
veins of shrimps; Clean & drain crab meat.
(2) Clean spinach. Blanch in boiling water for 2-3 mins.
Rinse under running water for a short while. Drain &
set aside; Finely chop garlic. Slightly season seafood
with salt & pepper.
(3) Melt butter in pan. Fry 1/2 portions of garlic. Add
seafood and cook over high heat until just cooked.
Sprinkle white wine over seafood & stir in cheese
sauce. Remove from heat.
(4) Fry spinach with butter & remaining garlic. Arrange
on bottom of baking dish. Arrange mushed potatoes
over edge of baking dish. Top with cheese sauce.
Sprinkle grated cheese on top & brown in hot oven
until golden brown.
Remarks : (1) Coat seafood with sufficient cheese sauce to prevent
seafood from drying out during the baking process.
