Differances between differant carbonated water?

What's the difference between seltzer, tonic water, sparkling water, and club soda

    They are not as different as you would think. All of these are water infused with CO2. Tonic water is the one that is most different. Traditionally tonic water was infused with quinine which helped prevent malaria and was very bitter. Modern tonic water contains less quinine and much more sweetener. Club soda (soda water) is the generic name for water infused with CO2. Sparking water usually refers to a name brand soda water like San Pellegrino or Perrier. Seltzer is the older name for soda water from the days of soda fountains when bottles of CO2 infused water were delivered from a bottler. Tonic and seltzer are seeing a resurgence from bartenders in major cities who are using artisanal waters for high level cocktails.
