Tender Baked Parmesan Chicken
1 sheet aluminum foil
No-stick cooking spray
1/2 cup light or low fat mayonnaise
1/3 cup shredded Parmesan cheese
1/2 tsp. garlic powder
4 boneless, skinless chicken breast halves
1/2 cup Italian seasoned dry bread crumbs
Preheat oven to 425 degrees F. Line shallow baking pan with foil. Spray foil with cooking spray; set aside. In medium bowl, combine mayonnaise, cheese and garlic powder. Coat chicken with mayonnaise mixture, then with bread crumbs. Place chicken in baking pan. Bake 15 to 20 minutes or until lightly browned and tender.
Tender Onion Baked Chicken

10 chicken breast tenderloins or strips
1/4 cup margarine, melted
salt and pepper to taste
1 (1 ounce) envelope dry onion soup mix
Preheat oven to 350 degrees F (175 degrees C).
Place chicken in a 9x13 inch baking dish. Pour melted margarine over the chicken strips. Season with salt and pepper, and sprinkle with dry onion soup mix.
Bake 40 minutes in the preheated oven, or until chicken is no longer pink and juices run clear.
Baked Ranch Chicken
1 envelope Ranch Dressing Mix
1 cup Italian Bread Crumbs
1/4 cup Freshly Grated Parmesan Cheese<
1/2 cup Butter or Margarine, melted
6 to 8 Boneless Chicken Breasts
In a shallow dish combine dressing mix, bread crumbs and Parmesan cheese. Dip chicken in butter then roll in crumb mixture.
Place in a greased baking dish and bake at 350º F. for 45 minutes or until juices run clear.
