Soul Kitchen, originally by The Doors
covered by X on their album "Los Angeles"
Hehehehehehe... are those sacrilege????? And since you're my favorite country-girl... here's one for you, baby:
Pancho & Lefty, originally by Townes Van Zandt

I honestly never think they are better, but here are a few I think are interesting...
"And Then He Kissed Me"-The Flying Lizards...
"Can't Get No Satisfaction"-Devo-Are We Not Men-1978...
...here's another really weird earlier instrumental version...
Here's a haunting bossa nova version of "Love Will Tear Us Apart" by Nouvelle Vague....
If remixes count, this is an amazing remix of Radiohead's "Climb Up The Walls" by Fila Brazilia from a few years back...
...I love what they did with the bass on this track and how they used so many of the harmonic guitar effects throughout the mix.
...all interesting and worth listening to; none necessarily better than the originals.

I'll state the obvious
Jimi Hendrix covering All along the watchtower by Bob Dylan.
Manfred Mann Earth Band covering Bruce Springsteen's Blinded by the light.

A few fairly obvious ones that come to mind:
Hound Dog by Elvis Presley (original by Big Mama Thornton),
Respect by Aretha Franklin (original by Otis Redding).
