5 Minute Layered Southwest Salad
3 cups torn romaine lettuce
½ can black beans, drained, rinse (freeze other half for later use)
½ can whole kernel corn, drained
¼ cup salsa
¼ cup shredded cheese (whatever you like)
¼ cup ranch dressing
1 cup broken tortilla chips
Place lettuce on serving platter or in bottom of glass serving bowl.
Cover with layers of beans, corn, salsa and cheese.
Drizzle with dressing; sprinkle with chips.
blue cheese dressing
warm sauteed buffalo chicken
thinly sliced celery
thinly sliced red onion
Easy Cheesy Taquitos
shredded chicken or beef
Add chicken or beef to flour tortillas, top with cheese (beans and corn if you wish), roll up really tightly and secure with a toothpick.
Brush with butter.
Bake 375 until browned and crunch.
Serve with salsa.
12 oz. Chicken breast, cooked
⅔ cup shredded cheese
¾ cup green onion (optional)
8 (8") flour tortillas
1 c. Salsa (optional)
1 c. Sour cream (optional)
Place 1 flour tortilla onto a microwavable plate.
Top tortilla with ¼ each of the prepared chicken, shredded cheese, chopped green onion and salsa.
Place second tortilla on top, place in microwave.
Heat on high until cheese is melted.
Repeat directions for other servings.
Serve with sour cream.
Grilled Peanut Butter and Jam
2 slices bread
Spread peanut butter on one slice of bread, and jam on the other. Put together like a sandwich. Spread butter on unbuttered side of both sides of sandwich.
Grill sandwich (like a grilled cheese) until both sides are brown and crispy. Be careful though, jam will be hot!

Sometimes for a change of pace, I like to bring some sliced carrot and celery, a nice chunk of cheese, some crackers, and grapes. Yogurt and wheat thins with an apple. Usually I just bring leftovers, as I make extra every Sunday. You can also make a batch of chicken breast on the weekend, and then have it in different ways during the week. On a salad, in a sandwich, with some frozen green beans and stuffiing, heated up in the microwave are just a few examples.

You should have some Pop Tarts and Guinness stout. I had brown sugar cinnamon Pop Tarts and two bottles of Guinness 250 for breakfast but could have eaten them for lunch just as easily.

-Cheese and Ham toasty or just cheese if you don't have ham. Or maybe put it in the oven if you don't have a toasty maker.
-Some crackers, with something on it or without anything.
-Yoghurt/milk with serials
-A piece of fruit/and some vegetables maybe a tomatoe or a salade if you have it.
-Or just regular toast with butter and maybe jam
-You can bake bread, yummy but not very healthy. If you have bacon or eggs tha's easy to make too.
Seriously I don't even know what you have in your fridge, but I tried.

okay, if you have a juicer, get 5 oranges, juice them, put juice in cup, add 1 table spoon of sugar in a little bowl and 2 table spoons of warm water. put in microwave in 1 minute. next pour sugar in orange juice add ice. enjoy with chicken and salad.
