As long as you have a valid green card and a valid passport from your country of citizenship, there is no reason why you couldn't.
Usually with AOS applications, if you travel without approved advance parole, it is consider abandonment of the case, but since you are applying for citizenship, that most likely will not be the case because you already have an approved status in the country (permanent resident). if you'd like to be on the safe side, give USCIS a call - 1.800.375.5283.
The only thing you should be concerned when it comes to this application is that your biometrics appointment may be scheduled during the time you're on the cruize. I have a friend who just filed for the same and got her appointment scheduled within 2 weeks for the end of this month. Just something to consider... hope this helps :)
