For the same reason your parents love and care for you.

Out of all the billions of people on Earth, you are special and unique to them.

So is God's love to humanity. Of all the creations in the Universe, we are special and unique to Him!

Take a finger and touch your nose.

It is made of atoms, built over billions of years in the stars of the galaxies. Talk about a long term project!! The hardest part is the iron, because when the core of a star finally reaches that stage, its only choice is to blow up.

Now, if you spent 14 billions years, putting atoms together that can be used to make organic life forms, wouldn't you care about creation? Would you go so far as to let your First Born Child be tortured to death, just so that you can give that creation the chance of life that was taken from them by their first parents?

I think it shows that the Creator of the Universe has a personal involvement in life here on the earth.

    Romans 8

20 For the creation was subjected to futility, not by its own will but through him that subjected it, on the basis of hope 21 that the creation itself also will be set free from enslavement to corruption and have the glorious freedom of the children of God. 22 For we know that all creation keeps on groaning together and being in pain together until now.

Because if the ‘creator’ is Evolution, it does not care or can care.

That’s why we have all the suffering in this world. It’s all random selection and mutations. Disease and deformities are all part of that.

And eventually as the sun gets closer to being a ‘Red Giant’ as predicted by science, we will not exist at all.

    Hence, it does not care….

Because God wants to get married.

I am not kidding. The bride of God are those who believe in Jesus. Atoms and billions of galaxies are just a means to an end. One marries a living being, not a boulder.

As far as all those other galaxies go, there may be alien species out there whom God cares about just as much as He does us. The Bible allows for this possibility.

I think the Creator encourages us to discover new technology that can further mankind. Scientists are observed searching for cures as well as studying the past.

I think the Creator of our souls wants us to seek knowledge and spiritual enlightenment.

The assumption seems to be that all those billions of galaxies were created so humans would have something pretty to look at.

In the theistic mind, humans are the undisputed center of the universe.

EDIT: @ Emmanuel, that would only make sense if each planet had its own god the way each family has its own set of parents.

    Brilliant question. Now we're thinking.

Indeed, how could one species on a planet within one of billions of galaxies be so important above all others? Perhaps we are, perhaps we are not. Perhaps we are just one of many that all play an intregal part in a grand plan.

    Perhaps "we" shall never know.

King David wondered in awe also.

    Psalm 8:3-5

3 When I consider Your heavens, the work of Your fingers,

The moon and the stars, which You have ordained,

4 What is man that You are mindful of him,

And the son of man that You visit him?

5 For You have made him a little lower than the angels,

And You have crowned him with glory and honor.

Maybe the creator gave us all the virtues we need to care for humanity ourselves. Unfortunately collectively we seem intent on ignoring them.
