    toffee.

    2 cups sugar

    1 cup water

    1 Tablespoon butter

    1 teaspoon salt

    equipment:

    a clean dry sheet pan

    a stainless steel sauce pot

    a heatproof rubber spatula

a bowl of water with a pastry brush in it

put your sugar and water in the sauce pot and bring to a boil. cook for 10 to 15 minutes under medium heat. do not stir too much. every once in a while, brush the sides of the pan with the wet pastry brush to remove the sugar crystals.

when your mixture turns deep amber, add the rest of the ingredients and quickly stir it all, pour it onto your clean and dry sheet pan and even out the toffee with your spatula. let it come to room temperature then overturn it onto a clean work surface and bang it out with force.

    EDIT:

You add the cold water and sugar to a cold pan. Think "sand on a beach". The water is just there to help regulate the melting of the sugar. All of the water will evaporate while it is boiling.

    Tom's toffee

    Ingredients

    1/2 lb unsalted butter

    1 cup granulated sugar

    1/2 cup nuts, finely chopped

1/3 cup chocolate chips, bittersweet, dark, or semi-sweet

    Method

Combine first 3 ingredients and boil, stirring constantly until it thickens and looks like a brown paper bag. Pour on greased cookie sheet. Sprinkle the chocolate chips on top. Let melt and spread smooth over the mixture. Let cool and harden. Break into pieces.
