The d40/60 are not much more than toys, and people only buy them because of the make, and automatically think that they are big time pro photographers as they have a nikon, and they are also limited as to what they can do.
If you were to buy one of them, you will soon want to upgrade.
Your best you have listed above is the Canon.
Is there any specific reason that you want to make this jump?
I ask as it is a lot of money, and lenses for either makes above are expensive.
I shoot with a Pentax K200D, which has an excellent dynamic range and Anti Shake built into the camera, NOT the lens, so extra lenses are cheaper. Also, as Pentax have used the same lens mount for 40 years, there are a lot of cheap prime lenses 'out there'.
You can get a K200D new, with 18-55mm lens for about £340
At the end, the choice is yours, and I have just given you a few pointers.
