Why is eating too much raw spinach bad for you?

Or is it? Does it have something to do with the oxalate binding to iron?

Please explain and provide some references, thanks!

    Spinach contains oxalic acid that binds calcium (-> if not enough calsium is eaten with spinach it will take calsium from your bones thus causing osteoporosis is consumed often in large quantities) and can be harmful if you have kidney problems. And it does affect the absorbance of iron, too. So if you are anemic and want to get better, do not eat foods with lot of oxalic acid.

    However, I do not see how this if affected by cooking the spinach? Oxalic acid does not react to cooking.

    So I would say eating too much spinach without iron and calsium supplement is bad for you whether it is raw or cooked.

    Depends on how large the salad is, but spinach isn't bad for you. Oxalate inhibits the absorption of iron, so you will want to eat something rich in vitamin C in your salad. Throw some tomatoes or bell peppers in your salad. And maybe mix up the salads you have. Another thing you can do is rub the leaves with a bit of olive oil to break down some of the nutrients. I do this with my kale.

    Having vitamin C with it, is supposed to help you absorb more of the iron.

    Iron from animals is more bio-available than iron from plants.

    Not that I think spinach is unsafe or anything (because I don't & personally I love the stuff), but here's some info on OXALIC ACID.
