this is my favorite spicy pasta salad and is only limited to your imagination.

2 cups cooked pasta of choice.

1 cup each, peppers, green onions, cauliflower, diced

1 teaspoon finly minced gresh ginger

1 teaspoon finely minced fresh garlic

1/2 teaspoon crushed red pepper flakes.

    1/2 cup oil

    '1/2 cup soy sauce

mix well. if it is kind of dry, add more oil and soy sauce in equal amounts. Set aside to chill. It is better after acouple hours chilled.

You can add more of the garlic and ginger and crushed red pepper to your taste. You can use what ever veg you like. For color I like to use a mix of red and yellow and green peppers when I make a big batch.

Add diced cooked chicken for an entree type salad.

To serve guests at a BBQ, serve with a kabob of marinated oriental flavored grilled chicken laying across the top.

Have you ever tried hot salads?? I mean salads with vegetables that are sauted in olive oil??

    Ingredients:

    1 tsp Olive oil

    1 small Onion

    4-5 Baby corn

1 small Capsicum / Green Pepper

    Salt and pepper

Heat olive oil. Fry onion rings until they are transparent. Add baby corn and capsicum cubes and salt. Fry for just 2 minutes. Turn the heat off and sprinkle salt and pepper.

    It turns out just great!!

    Quick Taco Salad

Bring to a boil 1lb browned/drained ground beef or ground turkey in a 1/2 cup of water. Add a Tbsp each of cumin, chili powder, garlic powder, onion powder, and a tsp of salt and pepper. Add 1 small diced white onion and 1 diced green bell pepper. Reduce heat to low and simmer uncovered until water is evaporated. Add 4oz cubed Velveeta and stir over low heat until mixed. Serve over layers of chopped iceberg lettuce with Frito's. Top w/ salsa and a dollop of sour cream.

Baby greens with Asparagus and Pistachios

    Lemon Vinaigrette:

    3 tbsp. fresh lemon juice

    2 tbsp. lemon oil

    ¾ tsp. honey

    ¾ tsp. sherry vinegar

    ¼ tsp. salt

    1/8 tsp. fresh ground pepper

    Salad:

1 bunch asparagus, trimmed and cut into 2in pieces

    ½ c. fresh fava beans

    8 ounces mixed baby greens

½ c. shelled pistachio nuts, coarsely chopped

To make vinaigrette, in medium bowl, whisk together all ingredients until blended.

To make salad: bring large pot of lightly salted water to a boil. Add asparagus; cook until just tender, about 3 minutes. Drain in colander, rinse with cold water until cool, and then drain again. Repeat with beans, cooking about 1 minute before draining.

In large bowl, combine greens, pistachios, asparagus, and beans. Add vinaigrette and toss.

    Enjoy!

Aside from the regular lettuce, tomato, cucumbers ... I add carrots and raisins, and sunflower seeds. Or I add meat (tuna, seafood, chicken). Or I add red onions, olives, pepperoncini, and salami, cheese, crutons, and bacon bits.
