牛肉焗薯蓉

材料: 

薯仔 2個    免治牛肉 2兩

鹽 適量     蒜頭 3瓣

低脂鮮奶 50mL  低脂芝士 2片

粟米 適量    蕃茄仔 2粒

蘑茹 適量    牛油 1茶匙

牛肉醃料:

生粉1/2茶匙     鹽1/4茶匙

老抽1茶匙     水1/4茶匙

麻油1/4茶匙

做法:

1 把兩瓣蒜頭切半,薯仔切粒,下適量鹽及蒜頭粒煮熟(約十分鐘)。

2 免治牛肉加入醃料拌勻,備用。

3 蘑茹切粒,芝士切成小粒。

4 下少量油,蒜頭爆至香,下免治牛肉少至熟,備用。

5 薯仔拿走蒜頭粒,隔去水份。

6 下鮮奶至喜歡的調度,加牛油,加入栗米粒及蘑茹粒,用薯蓉專用器把它們拌勻(這程序一定要一氣呵成,薯仔冷了的話是做不成的)。

7 薯蓉放入焗盤,用叉子在薯蓉面畫紋,放上芝士粒。

8 薯蓉放進焗爐,200C焗十分鐘使表面香脆。 

9 放上香草及蕃茄仔裝飾。

    Mashed Potatoes with beef

    Ingredients:

    - 2 potatoes

    - 75g ground beef

    - 75ml low-fat milk

    - 2 slices low-fat cheese

    - 2 cherry tomatoes

    - 3 garlic cloves

    - moderate amount of sweet corns

    - moderate amount of mushrooms

    - 1 teaspoon butter

    - a dash of salt

    Seasonings for ground beef:

    - 1 teaspoon dark soy sauce

    - 1/2 teaspoon corn starch

    - 1/4 teaspoon salt

    - 1/4 teaspoon water

    - 1/4 teaspoon sesame oil

    Directions:

    (1) Cut 2 garlic cloves into half. Cut potatoes into cubes. Add them to salted boiling water and cook until done, about 10 minutes.

    (2) Mix ground beef with seasonings, set aside.

    (3) Dice up mushrooms and cheeses.

    (4) Heat oil in a pan, saute garlic until golden. Add in ground beef. Cook until done. Set aside.

    (5) Remove the garlic in the potatoes and drain water.

    (6) Add milk refer to your own preference of the thickeness. Add butter, sweet corns and mushrooms. Mix them with a potato masher. (This process has to be down fast. It fails if the potatoes are cooled down)

    (7) Transfer the mashed potatoes to a baking dish. Run a fork across the surface. Top with cheese.

    (8) Bake at 200'C or until the top is golen brown and crispy.

    (3) Garnished with herbs and tomatoes.
