I would do it the other way.
Before I got ANYTHING, except chickens or ducks, I'd visit other people who have different animals and ask loads of questions. I did, and never had a regret. I knew what I was getting into.
One caution on any animal is to make sure you have a large animal vet that makes farm calls. Dog and cat vets know virtually nothing of any farm species.
Goats are not easy, nor are Guinea fowl.
As far as the veggies, all are easy. If you don't know anything about them, the backs of the packages and a good gardening book will tell you pretty much all you need to know.
Potatoes are not easy, but popular. For me, there's way too many bugs, and far too much labor, and they're really cheap in stores.
