    Dalva Porto Tawny

    將先前已在木桶中陳年的酒液混合、並運用傳統方法釀製而成(如中斷發酵並加入白蘭地),之後再置於木桶中陳年3年。成琥珀般的黃褐色,酒體間帶有一絲成熟果香,餘韻迷人。建議搭配以糖漿佐料的食物及上等藍起司皆很合適。波特酒是葡萄牙的特產,屬於酒精加強型葡萄酒,是全世界最受歡迎的餐後酒。Tawny是黃褐色,通常指的是經過陳年的波特酒,喝起來有葡萄乾的味道,甜度頗高。

    Attributes: The term ‘Tawny’ has been applied to a dizzying amount of styles, and has unfortunately, made the term rather confusing.

    Place of Birth: the Douro Valley in the northern provinces of Portugal

    Comprised of: Touriga Nacional, Tinta Roriz, Tinto Cao, Tinta Barroca and Touriga Francesca are the most popular black-skinned grapes, among 80 other authorized grape varietals. With the exception of recently planted vineyards, most port growers have a mixture of 20 to 30 different grape varietals intermixed in the same vineyard plot.

    Background

    Tawny port wine is made from red grapes aged in wood, exposing them to gradual oxidation and evaporation, for longer than a ruby port wine. As a result, the wine loses its brilliant ruby color, becoming a dark amber or a tawny hue with a characteristic “nutty” flavor imparted by the wood. Finally, through a system of fractional blending with various older port wines to match the house style, the resulting tawny wine is elegant and soft, showing delicate wood notes and rich mellow fruit.

    Come summer, several bulk tawnies are shipped up river to the Douro valley in cement baloes where they literally stew from the ambient heat, referred to as the Douro Bake.

    補充一點點波特酒的資料喔

    波特酒也是葡萄酒的一種,一樣經過採收-榨汁-發酵,只是到發酵階段時,趁著糖份還沒完全發酵成酒精的時候加入白蘭地終止發酵(一般的甜酒則是透過添加二氧化硫或降低溫度來停止,所以即使甜度高,酒精並沒有很濃)

    之後的程序就和一般紅酒一樣,也有所謂的橡木桶陳年;而幾乎所有的波特酒都是混合多種品種釀成(如Touriga Nacional,Tinta Barroca, Touriga Francesa等等,是每家酒廠的風格而定)

    有分為五大類型

    1. 寶石紅波特 Ruby

    最年輕,熟成時間大多在四年內;顏色如紅寶石一般。以果香為主, 通常口感較柔順,也比較簡單。

    2. 陳年波特 Tawny

    培養的時間長,在桶中氧化程度高,所以顏色較淡,偏淡棕紅色;

    一般都是混合不同年份調配而成,普通等級大多經過8年的桶培,10年以上的會有較高的品質;酒商通常會以10年為一個單位,推出10.20.30,甚至40年的濃郁波特酒。

    3. 年份波特 Vintage

    只有在表現特別好的年份才會出現;通常每10年才會出現2.3次,採單一年份裝瓶;桶培不到兩年;

    顏色濃黑,非常耐久放,至少都要存放10年以上,成熟之後會有很甜潤的味道,溫和不刺激,香味佈滿整個口腔;因年份久遠,大部分會有沉澱物出現

    4. 晚裝瓶年份波特 L.B.V (Late Bottled Vintage)

    和年份波特一樣,也只採用同一個年份的葡萄,不過標準不同,選用較好的年份(不一定是絕佳)生產,成熟速度快,桶培4~6年,裝瓶時間較晚,所以稱晚裝瓶;雖然沒有Vintage 濃郁,但是成熟快,不用等到10幾年就可以喝,價格也便宜許多。
