Meat tastes good, but it doesn't mean we should be doing it. Maybe hitting someone when you are angry feels good at the time, but it doesn't mean it's the right thing to do.
Basically, just because we CAN do something, doesn't mean that we SHOULD. Carniverous animals don't choose whether to eat meat or not, they have to in order to survive. We can not eat meat and survive very well. So, why should we eat meat? Because it tastes good? As people have said, maybe humans taste good too. Because we can? Well we could also torture animals, but we don't think that's right. Because it's good for us? If you have access to vegetables you can be just as healthy as any meat eater.
I think if you can surive well without eating meat, then we should. Even if meat is tastier, I don't think killing animals is worth a meal being 20% tastier.
Oh, and just because it's "millions of years of evolution", doesn't mean we should still be doing it today. It's called evolution for a reason, because we CHANGE, not because we have to do the same things we've done. Maybe vegetarianism is our next evolutionary step, it would certainly help the planet survive our overpopulation problems by being more efficient with food.
