The healthiest possible diet for a diabetic (or anyone, for that matter) is the simplest diet there is. The one that follows Mother Nature. That is to say, the closer you stick to natural foods, the easier your blood sugar will be to manage. The more refined products you eat, the worse your condition is most likely to become. I put the widest variety of raw vegetables I can think of in my salad. Radishes, field greens, quartered artichoke hearts, spinach, broccoli, turnip, zucchini, celery, red and green onions, garlic, tomato, lemon juice... you get the idea. Then, I top it off with olive oil and balsamic vinegar... yummie.
