The bayberry juices were thawed at room temperature and centrifuged

at 4000 rpm for 10 min. The supernatant was filtered through a Millipo

Technologies, Beijing, China). The elution system was reported earlier

(Fang et al., 2007b). Solvent A was 0.1% formic acid in water (v/v),

and solvent B was 80% acetonitrile in water (v/v). The elution profile

consisted of a linear gradient from 0% to 66% B for 40 min, washing

(100% methanol) for 5 min, and then re-equilibration of the column

for 10 min using solvent A with the flow rate of 1.0 ml/min.

Identification of anthocyanin was compared with the retention

time and the UV spectra of the standard. Quantification was performed

by an external standard method, and anthocyanin content

was expressed as milligrams per litre (mg/l) of juice.
