1. Garden Salad (田園沙拉)
2 large carrots
1 cup green and red capsicums
1 cup alfalfa
oil free salad dressing, to taste (or squeezed lemon juice)
1. Cut Lettuce coarsely
2, Grate carrots
3. Slice Green and red capsicums
4. Mix all the ingredients together.
2.Barbecued sardines with fennel and mint salad莎甸魚+茴香/薄荷葉沙律
Sardines are full of omega-3s, plus they are quick to cook.
6 sardines, gutted
1 tbsp fennel seeds
2 cloves garlic, crushed and finely chopped
1 small fresh chilli, finely chopped
1 tbsp olive oil
1 fennel bulb, thinly sliced
1/2 red onion, finely sliced
1/2 bunch fresh mint
Juice of 1/2 lime
Prepare the fish: Rub the back of a knife over the sardines to remove any scales and wash under the tap. Pat dry with kitchen paper. Mix together the fennel seeds, garlic, chilli and half of the olive oil. Season with salt and pepper. Rub this mixture all over the fish, both inside and out. Put to one side.
Make the salad: Put the fennel bulb, red onion and mint in a bowl. Pour over the rest of the olive oil and the lime juice and toss through.
Cook the fish: Place the fish on the barbecue and cook for two minutes on each side. Serve with the fennel and mint salad.
