    3 lb. chicken, cut up

    Or use chicken parts, breasts, legs, etc. Flour and season chicken and place in a roasting pan.

    2 c. orange juice

    2 tbsp. brown sugar

    1/2 c. dry sherry


    Bring to a boil and pour over chicken. Put a slice of onion and a slice of peeled orange on each piece of chicken. Then pour orange juice mixture over chicken. Bake at 375 degrees for 1 to 1 1/4 hours. Do not cover. Add 1 cup of sliced mushrooms during last 1/2 hour of cooking.



    2 chicken breast (split into 4 halves)

    1 (16 oz.) can mandarin oranges

    1 tsp. powdered ginger

    1 c. chicken broth

    1 1/2 inch of butter

    1 tbsp. cooking oil

    1 sm. onion, chopped

    1/4 c. orange liqueur or sherry

    Heat cooking oil and butter in a skillet. Cook chicken breast until brown. Remove chicken from skillet and place in a covered dish. Add chopped onion to renderings in skillet and saute until tender or clear. Drain mandarin oranges and add slices to the onion in the skillet and continue to saute. Add 1 teaspoon of ginger powder and stir. Add 1/4 cup of orange liqueur and let simmer 2-3 minutes. Add 1 cup of chicken broth and stir all ingredients together. Now add the chicken breast and cook on low heat 10-15 minutes, covered. Before serving, uncover dish and let simmer to desired thickness. Serve with noodles.



    4 breasts chicken

    1 sm. can frozen orange juice concentrate

    1 pkg. Italian Good Seasons salad dressing

    1/2 c. brown sugar

    Place chicken breast in a shallow baking dish. Spread frozen orange juice concentrate over chicken. Sprinkle with dry Good Seasons Salad dressing. Bake at 350 degrees for 1 hour and 15 minutes. If you are using more chicken, use a large (12 ounces) can of concentrated orange juice.



    1 whole chicken, cut up

    1 c. orange juice

    1/4 c. brown sugar

    1/2 c. orange marmalade

    2 tbsp. cornstarch

    Skin chicken and place in deep pan. Smother chicken with orange juice. Sprinkle chicken with granulated brown sugar. Bake for 1 hour on 350 degrees. The last 20 minutes, baste generously with orange marmalade.

    When finished, put remaining juice into a saucepan. Cook on medium heat and add cornstarch to thicken. Add Grand Marnier to taste.

    6 chicken thighs or 4 half breasts



    1 (8 oz.) can frozen orange juice

    Place chicken in baking pan. Season chicken pieces. Place orange juice over chicken (do not dilute). Cover with aluminum foil. Bake in preheated oven at 375 degrees for 1 hour or until chicken is done. NOTE: You may use a 12 ounce can of orange juice depending on amount of chicken.

    AWARD WINNING RECIPE! Won our regional cookoff at the church for many years!!

    6-9 pounds frying chicken, cut into pieces

    1 1/2 cups flour

    1/2 cup bread crumbs

    5 teaspoons salt

    1/2 teaspoon pepper

    1/4 teaspoon paprika

    2 cups butter

    1/2 cup orange juice

    1/2 cup lemon juice

    Roll chicken in mixture of flour, bread crumbs of your choice, salt, pepper and paprika.

    Put 1 1/4 cup butter in a 9 x 13 x 2-inch baking dish. Place in a hot oven (400 F) for a few minutes to melt butter. Do not let it brown. Remove from oven; place chicken in a single layer in the pan, turning to coat with the melted butter. Bake for 60 minutes, skin side down. Turn chicken. Mix remaining 3/4 cup butter, melted honey and lemon juice.Drown that chicken in the sauce. Bake for 30 minutes longer or until fork tender, soaking often with the orange juice.

    I roast a chicken with the juice of three oranges in the roasting pan - later on, this will make the basis for a delicious chicken-orange gravy. Cook the squeezed orange halves inside the chicken.

    If your mom is looking for a syrupy sweet orange sauce, then add half can of frozen orange juice concentrate into the gravy just long enough to heat it through.
