Does anyone know the recipe for the sauce at Relais de l'entrecote (cafe de paris)?

    This is the best I can do. It's quite a secret recipe. The dry vermouth can be substituted with simply a white wine.

    The sauce begins with the residue from the steaks itself.

    3 tablespoons Butter

    1/2 cup Mushrooms -- chopped

    2 pinches Cracked black pepper

    6 ounces Brown sauce

    3 teaspoons Dijon mustard

    1/2 ounce Dry vermouth(or dry white wine)

    1/2 ounce Madeira(sweet white wine)

    BROWN SAUCE

    2 tablespoons Butter

    1/4 cup Flour

    4 cups Beef stock or broth

    1 cup Tomatoes -- chopped

    1 medium Onion -- coarsely grated

    1 Celery stalk -- finely chopped

    Bay leaf; crushed

    2 tablespoons Sherry(or red wine)

    You will simply have to experiment with it, but this is the bases of the recipe. Good luck.
