This depends entirely on the thing you are extracting. You should look for solubility.

Lets say you want to extract two items in a solution( a and b).

a and b will have different solubility so you would want to find a solvent that will "take away" one of the items and leave the other item alone.

Temperature is also another factor, but it is less important than solubility.
