It depends what you're writing about.
You could ask a question and then add according to Merriam-Webster's dictionary, ___ is defined as....
I think it's alway good to start off an essay with a transition or a question, depending on what the question asks.

It depends on your grade, but it's generally considered bad form to do so. You can try starting with a quote or a one sentence summary of your topic, or a story about how your topic effected a specific person. That much depends on what you're writing about, but dictionary definitions are a bad way to start.
