Actually, they can be classified as all three in some form. The meat of the coconut is usually referred to as fruit, and the coconut itself is the nut, or seed, that will reproduce into a coconut palm tree if allowed to sprout and grow, and the oil made from coconuts is classified as a “vegetable oil” in terms of commodity trading.

The coconut is actually a giant seed, thats why it can grow into a coconut tree, but otherwise its classified as a fruit.

A coconut is special it is classified as a Drupe. Commonly called "stone fruit".
Some flowering plants that produce drupes are coffee, jujube, mango, olive, most palms (including date, sabal, coconut and oil palms), pistachio, white sapote, and all members of the genus Prunus, including the almond (in which the mesocarp is somewhat leathery), apricot, cherry, damson, nectarine, peach, and plum.
