How to make Crock Pot veggie soup?

Ok so me and my roommate are all into healthy eating and I want to know if any of you have a recipe for a crock pot veggie soup..something with tomato paste,stewed tomato's,chicken broth,veggies..give me some ideas and how to cook it in a crock pot..NO BEANS plz,they make me ill...

    1 pkg. of leftover cubed pot roast or stew meat

    1 can or 1 pkg. frozen mixed vegetables

    1 pkg. soup seasoning

    1 can (6 oz.) tomato paste or 1 sm. can tomato sauce

    1 c. cubed potatoes, frozen or fresh

    Add water to about 1/2 of crock pot. Start on high 6 hours. Add water to desired consistency.




    2 lb. soup bones or 1 lb. beef short ribs

    2 qt. water

    1 tsp. salt

    1 tsp. celery salt

    1 sm. onion, chopped

    1 c. carrots, diced

    1/2 c. celery, diced

    2 c. potatoes, diced

    1 lb. can whole kernel corn, undrained

    1 lb. can tomatoes or home canned, cut up

    2 turnips, peeled and finely chopped

    Place the meat, water, salts, onions, carrots and celery in crock pot. Cover and cook on low for 4-6 hours. Remove bones, chop meat and return to pot. Add potatoes, corn, tomatoes and turnips. Cover and cook on high for 2-3 hours more. Serves 10-12



    4 tbsp. butter

    1 1/2 c. carrots, pared and sliced

    2 c. celery, sliced

    1 lg. onion, thinly sliced

    1 green pepper, sliced

    1 c. water

    2 (4 oz.) cans mushrooms with liquid

    1 (16 oz.) can tomatoes

    3 tbsp. brown or white sugar

    3 tbsp. Minute tapioca

    Combine all ingredients in crock pot. Stir thoroughly. Cover and cook on low 2-3 hours. Good served over noodles.



    Brown 2 pounds deer or beef burger. Add:

    Lg. onion, diced

    3 lg. stalks celery, diced

    32 oz. tomato juice

    Salt and pepper to taste


    2 c. frozen corn

    2 c. frozen carrots

    1 c. peas

    1 c. green beans

    4 c. water

    Cook on high 4 to 5 hours. Add 1/2 cup macaroni; cook until macaroni is done.

    Ok, so here's my ultimate Veggie soup, put it all in the crock pot, set it on low and go study!

    Vegetable/Chicken Stock (broth)

    Cut up Carrots, Celery, Onions, Zucchini, Squash, Asparagus, Cauliflower, tomatoes, mushrooms in bite sized pieces

    Throw in 2 large garlic cloves(the larger, the sweeter)

    3 sprigs of fresh Thyme and one bay leaf

    White Pepper and Salt


    When you come back from class, throw in some frozen peas and green beans, set to high and wait about 15-20 minutes (it will take about 8 minutes to readjust the heat setting on your crock pot and the other amount of time to cook your frozen veggies all the way through)and you will have the best vegetable soup you've ever had!

    Take a small can of tomato paste, a can of stewed tomatoes, 2 cups of chicken broth, and cut up into bite-size whatever veggies you want. Put all into crock pot, put on the lid and cook on high power for 6-8 hours. Season to taste.



    PS I would add seasonings of basil, celery seed, onion salt, and some garlic, but you can add whatever you wish.

    You can do a really simple one but just cooking all kind of veggies in some chicken broth.

    It's not a recipe but here is what I would add:




    canned stewed tomatoes and or tomato sauce



    green beans



    thin strips of spinach....

    bell peppers

    diced green chili peppers if you like that sort of stuff

    I would use for seasoning a combo of any of the following and any other you like or have on hand.

    Salt and Pepper

    Celery salt

    Garlic powder/granulated garlic (even if you already have the fresh stuff)

    Onion Powder (same as garlic powder)

    itailain seasoning


    seasoned salt

    mrs dash veggie seasoning

    I have lots of soup recipes using the crock pot. I've been using a crock pot for over 25 years, and I've found the best source of recipes for it is a cookbook author named, Mabel Hoffman. You can look her up online, or you can go to the Food Network website and enter crock pot in the search field. There are tons of great recipes there. You can always add some uncooked pasta towards the end of the cooking time, or some dry alphabet pasta. Also any kind of beans will add protein to the soup. Have fun....

    Cut your vegies into similar sized pieces, (whatever veg you like)


    2 T tomato paste

    1 t Garlic crushed

    Cover with stock and cook on low 6-8 hours

    You can also blend the soup to have a different texture and add a dollop of sour cream

    Serve with warm dinner rolls

    Normally i would just say fruit, but i think both. I really like the sweet taste of the fruits but i love the tart and kick the greens bring
