I am originally from western Pennsylvania and am looking for a recipe called Pineapple Squares.?
The recipe I used had a sweet dough made with egg yolks. The whites were reserved to bush on the top layer of dough before baking. The dough ws divided into two balls and rolled out. One layer was placed in a jelly roll pan. The filling was a can of crushed pineapple and tapioca. The filling was not cooked prior to being layered between the dough.

3 cups flour
3 egg yolks (reserve egg whites)
2/3 c warm milk
2 tb sugar
1 pkt dry yeast
1 ts vanilla
filling: 2 cans pineapple pie filling

1 lb. 14 0z can un-drained crushed pineapple
3 tbs tapioca
1/2 c sugar
1 egg yolk
Procedure: Cut margarine into flour as for pie dough until pea
size crumbs. Dissolve yeast in warm milk. Add sugar,
vanilla and egg yolks reserving several tablespoons to brush over top. Add to flour mixture and mix well.
Knead into a soft smooth dough, adding more flour if
neeeded. Divide into 2 pieces. Roll each piece into a 9 x13
rectangle. Place a pie of rolled dough in pan. Add cooled
filling if cooked or 2 cans of the canned pie filling. Add
top crust and carefully seal edges. Let rise 1 hour. Brush with beaten egg white. Bake 350 for 35 minutes. Cool to room temperature. If top crust buckles when removed from oven, lay a tea towel over crust while cooling. this trick, flattens out the crust. Cut into squares when cold. sprinkle with powdered sugar if desired.
For filling: Combine all ingredients well and cook and stir
over medium heat until thickened. Remove from heat to cool.
