What does salt do when making cheese?
I want to know how salt affects the cheese making process so if you know please answer :)

The earliest cheeses (from Egypt) were extemely salty, as the salt was used as a preservative. When cheesemaking came to Europe, the climate was different, so less salt had to be used. It is used primarily as a flavoring agent now.
