A Steam Cake Question?

Hello!

I would like to know how you make steam cake without a steamer.

Any help would be greatly appreciated. Thanks!

    STEAM CAKE

    1 c. pancake flour (no substitutes)

    5 eggs, separated

    1 c. flour

    Pinch of salt

    3 caps vanilla

    2 tbsp. oil

    Separate eggs, beat whites until stiff. Add remaining ingredients to the egg yolks and mix well. The batter will be very thick. Fold in beaten egg whites.

    Cook at 350 degrees for 25 minutes over boiling water. An electric fry pan with a rack in the bottom of it will work. Makes one 9-inch cake pan size.

    STEAMED WHITE TEA CAKES

    1 1/4 c. sugar

    2 c. rice flour or unbleached flour (or 1 c. of each)

    3 tsp. baking powder

    1/2 tsp. salt

    1 1/2 c. water

    1 tsp. anise extract

    1/2 c. grated fresh coconut

    Food coloring, optional

    Grease small cupcake molds. Combine sugar, flour(s), baking powder, salt, and water. Mix until it has the consistency of thick batter. Stir in anise extract. If desired, divide batter and add a few drops of preferred food coloring to each portion.

    Pour into cupcake molds, filling them about 2/3 full. Arrange in a steamer and steam for 20 minutes or until cakes are done. Serve with grated coconut on top.

    CHOCOLATE STEAM CAKE

    2 c. plain flour

    2 c. sugar

    1 stick butter

    1/4 c. shortening

    2 tbsp. cocoa

    1 c. water

    1 tsp. soda

    1/4 tsp. salt

    2 eggs

    1 tsp. vanilla

    Sift flour and sugar together. In a saucepan, mix butter, shortening, cocoa and water. After this starts boiling, pour soda, salt, eggs and vanilla over dry mixture. Mix well and pour into a long pan. Bake at 350 degrees for 30 minutes.

    ICING FOR CHOCOLATE STEAM CAKE:

    1 stick butter

    2 tbsp. cocoa

    6 tbsp. milk

    Bring this to a boil, stirring constantly. Add 1 box powdered sugar, sifted, 1 dash of salt and 2 cups pecans. Pour over cake while still warm.

    STEAMED CHINESE SPONGE CAKE

    4 eggs

    1 c. sugar

    1/2 tsp. lemon extract

    1 c. sifted cake flour

    1/2 tsp. baking powder

    1/4 tsp. salt

    Powdered sugar for sprinkling

    Beat eggs until light and foamy. Add sugar gradually until all is used, beating throughout. Add lemon extract. Continue beating. Mix flour, baking powder and salt and sift over egg mixture, folding in lightly. Pour into slightly greased pan or a pan sprayed with a food release. Steam for 20 minutes. Before serving, sift powdered sugar over cake.

    COMMENTARY: In steaming foods, condensed steam can be prevented from dripping into the item being steamed by placing a dish cloth under the lid.
