How much yogurt do you substitute for one egg in baking?

    I am a former chef and a normal medium egg is 3 oz so between 2-4 oz is fine and a bit of oil as the fat that the egg yolk provides a 1/2 teaspoon., I use it all the time along with apple sauce and whey powder.

    Here is a list of some...keep in mind some work better than others... 2 Tbsp. water + 1 Tbsp. oil + 2 tsp. baking powder for each egg (I have used this one before..turned out nicely) Applesauce Pureed prunes -You could also look on the internet for some recipes that dont call for eggs in the first place....there are quite a few of them actually.

    i found on a vegetarian site that you can use tofu or bananas as a substitute. i think the banana would taste better than tofu for brownies though.
