Without a photo or more of a description, it is hard to say for sure. Is it a grass-type plant (when you say stalk plant I think corn) or a dicot?
The plant that comes to mind is dumbcane (dieffenbachia) It is normal for the leaves to come off over time naturally to reveal the cane. Here is a picture of it:Source(s): Botanist and houseplant enthusiast.

If you don't have a picture describe it.
Does it have stripes/spots
Does it look like a plant you know.
There may be a lot of reasons for leaf loss, but for a new plant the reason is usually to much water. And since we don’t know what kind of plant it is here are a few guide lines.
If it is wet let it dry out for a week.
Move it closer to a light source, near a window.
Do not fertilize a sick plant.

There are lots of reasons leaves fall off plants. It would help to have a picture of the leaves, but it could be poor soil, overwatering, poor light or too much light.
You'll get better answers if you upload a pic.

Maybe you should ask the florist more, or scan some of the falling leaves and upload a pic.
