can l please have a cheese cake recipes with chinese and english and may be

picture telling me what to do thx a lot

    Fresh Cream Cheesecake with Summer Berries

    Inspired by the classic French dessert cour a la creme, this has all cheesecake's richness without the rigmarole of baking. Just what you want on a hot summer day; perfect with a swath of juicy berries.

    Cheesecake:

    1 pound cream cheese, at room temperature

    1 1/2 cups confectioners' sugar, sifted

    Zest of 1 lime (about 1 teaspoon)

    Juice of 2 limes (about 1/3 cup),

    1 tablespoon vanilla bean paste or vanilla extract

    2 1/2 cups heavy cream

    Berries:

    2 cups fresh blueberries

    1/3 cup water

    2 tablespoons sugar

    1 cup halved or sliced fresh strawberries

    1 cup fresh raspberries

    1/2 lime

    For the cheesecake: Line a medium (about 8-inches wide) sieve, fine strainer or colander with a double layer of damp cheesecloth and set over a bowl.

    Beat the cream cheese in a large bowl with a hand-held mixer on medium speed until smooth. Add the sugar, lime zest and juice, and vanilla. Beat until light and fluffy, scraping the sides of the bowl and beaters as needed.

    In another bowl, beat the cream just until it holds a stiff peak. Stir about 1/3 of the whipped cream into the cream cheese mixture to lighten the cream cheese. Gradually fold in the remaining whipped cream to make a light mousse. Transfer mixture into the lined sieve and fold the cheesecloth over top and press gently. Cover and refrigerate to drain for at least 4 hours or up to 3 days.

    Just before serving, prepare the berries: Cook about half of the blueberries in a small skillet with the water and sugar, over medium heat until the berries get juicy, about 8 minutes. Toss all the berries together in a large bowl, along with a squeeze of fresh lime juice

    Unwrap the cheesecake and invert onto a platter. (Discard the cheesecloth.) Use a large ladle or spoon to press a well in the center of the cake.

    Spoon the berries into the well and drizzle the juices over the top or serve on the side. Serve a scoop of summer cheesecake with some of the fresh berries.

    製法:

    1. 將餅乾放於塑膠袋內,用重物壓碎,成為消化餅屑。

    2. 牛油、糖及肉桂粉加入消化餅屑拌勻,倒進七吋圓形烤模中,壓實,放入冰箱備用。

    3. 將烤箱預熱至150°C。芝士用電動打蛋器打軟後加入糖繼續打滑,慢慢加入雞蛋、麵粉、檸檬皮屑和乳酪,打勻至全部的材料看起來幼細。

    4. 將內餡倒入已雪硬餅底中,以150°C 烤50分鐘。待涼後,再放入冰箱中冰透就可以吃了。

    小貼士 :

    1. 將忌廉芝士在使用前一小時從雪櫃取出攤軟, 才容易打得軟滑。

    2. 忌廉芝士在各大超級市場都買的到。最普遍的是卡夫(Kraft)的Philadelphia Cream Cheese。

    3. 切蛋糕都很講學問的,如想切起來像店裡蛋糕的賣相那般好看,刀子先要被火燒一燒過才切,每切一刀後將刀子擦乾淨再烤熱,再切第二刀。

    Mars Cheesecake

    Ingredients

    250 g plain chocolate biscuits

    150 g butter, melted plus and extra

    20 g butter

    300 ml thickened cream

    2 tablespoons brown sugar

    50 g milk chocolate, chopped finely

    3 teaspoons gelatin

    60 ml boiling water

    2 (250 g) packets softened cream cheese

    110 g caster sugar

    3 (60 g) Mars bars, finely chopped

    Directions

    1Process biscuits in a food processor until the mixture resembles fine breadcrumbs, then add the melted butter and process until combined.

    2Press biscuit mixture firmly over the base and side of a round (20cm) springform cake pan.

    3Shill for 30mins or until firm.

    4Meanwhile, combine 2 tablespoons cream, brown sugar and extra butter in a small saucepan.

    5Stir on low heat for 3-4 minutes, until the sugar dissolves.

    6Set aside.

    7In a separate saucepan melt the chocolate with 2 tablespoons cream on low heat stirring until smooth.

    8Set aside.

    9Dissolve gelatin by whisking into water with a fork until dissolved.

    10Cool slightly set aside.

    11Using an electric mixer, beat the cream cheese and caster sugar together in a bowl until smooth.

    12In another bowl whisk remaining cream until soft peaks form.

    13Stir gelatin mixture into cheese mixture with Mars bars.

    14Fold in cream.

    15Pour half of cheese mixture into prepared pan and drizzle with half of the caramel and chocolate sauces.

    16Pull a skewer backwards and forwards through the mixture several times to create a marbled effect.

    17Repeat process with remaining cheese mixture and sauces.

    18Cover and chill for 3 hours until set.

    19Slice to serve.
