    Empanadas de Plátano Banana Empanadas

    Ingredients For the Filling:

    1 banana, peeled and sliced thinly

    1/8 cup walnuts chopped

    1 teaspoon crčme fraiche (or sour cream mixed with heavy cream, see below)

    1/4 teaspoon white sugar

    1 package puff pastry, thawed

    1 large eggs, lightly beaten

    creme fraiche or heavy cream/sour cream mixed

    shredded unsweetened coconut, toasted

    raspberry sauce - Pureed Frozen Strawberries

    coconut ice cream

    4 fresh strawberries, halved

    Remaining Ingredient:

    Canola Oil for Frying

    In a medium bowl, combine the banana, walnuts, the sour cream/heavy cream (creme fraiche), and white sugar. Set aside.

    On a cutting board, unfold one of the puff pastry sheets. Using 4-inch round cookie cutter, cut out 4 circles from sheet. Brush each with a beaten egg.

    Slightly off center of each circle, spoon 1 tablespoon of banana mixture.

    Fold one side over the filling and crimp the edges together to seal.

    Place on a sheet of waxed paper and repeat with remaining filling and circles.

    In a deep saucepan, heat 3 to 4 inches of oil until it registers 350 degrees F on a deep fat frying thermometer. Working in batches, fry the empanadas, turning over form time to time with slotted spoon, until crisp and golden brown (5 to 10 minutes). With a slotted spoon, transfer empanadas to a rack over paper towels to drain.

    Alternate cooking method: the empanadas can be baked in a 350 degree oven for about 20 to 25 minutes

    Here's a recipe for banana empanadas. I know it's not exactly the same, but it's a start, right?


    1/4 cup raisins 2 1/2 cups all-purpose flour 1/2 teaspoon salt 3/4 cup shortening 2 tablespoons plain yogurt 1/2 cup cold water 4 large ripe bananas, coarsely chopped 1/2 teaspoon ground cinnamon, or to taste 1 tablespoon cold water 1 egg white

    Soak raisins in hot water for 30 minutes. Preheat the oven to 425 degrees F (220 degrees C). In a large bowl, mix together the flour and salt. Mix in shortening using a fork, until the entire mixture is in pea-sized pellets. Stir in yogurt, and just enough of the 1/2 cup of cold water to hold it together in a dough. Roll out dough to a square 1/8 inch in thickness. Use a knife to cut into four 8x8 inch squares. Don't worry if they aren't perfect. Drain the raisins, and mix with the cinnamon and chopped bananas. Spoon some of the banana mixture onto half of each square, leaving at least 1/2 inch of dough exposed at the edge to seal the edges. Fold the dough over the fruit, and pinch the edges together. Make sure that they are secure. I like to roll the excess dough up around the edges and then pinch it until it's thin again. You'll want to have about a 1/2 inch closure in the end. You can trim the edges a bit to make them more aesthetically pleasing. Place empanadas on a baking sheet. Whisk together 1 tablespoon of cold water and egg white; brush over the tops. Bake for 30 minutes in the preheated oven, or until golden brown

    Empanadas are a food base throughout mexico and southwards ... I got no answer for you as are plantains too ...idk?
