Does anyone have a good recipe for diabetic cookies/biscuits?

I want to make biscuits for my granny who was recently diagnosed with diabeties. She has a weak stomach so plain biscuits would be best but i know that she likes ginger cookies, does anyone have a good recipe??x

    1 c. flour

    1/2 tsp. baking soda

    1 1/2 c. quick oatmeal

    1/2 to 3/4 c. Sugar Twin

    1 tsp. vanilla

    1 c. raisins

    1/2 tsp. cinnamon

    1/4 tsp. nutmeg

    2 egg whites, slightly beaten

    1/2 c. skim milk

    1/3 c. oil

    1/2 c. nuts

    Sift dry ingredients all but oats. Add oats. Add rest of ingredients, mix. Drop by teaspoon on greased cookie sheets. Bake at 375 degrees for 12-15 minutes.


    2 c. Bisquick

    2/3 c. brown Sugar Twin

    1 box (4 serving size) sugar-free instant butterscotch pudding

    1 box (4 serving size) sugar-free instant chocolate pudding

    4 tbsp. butter, melted & cooled

    1 tsp. vanilla

    3/4 c. mayonnaise

    2 1/2 oz. chopped pecans

    As listed mix all ingredients together, beating well after each addition. Drop dough by teaspoonful onto ungreased baking sheets. Bake at 350 degrees for 16 to 18 minutes or until firm. Cool on pan 5 minutes and then transfer to paper towels. Makes 4 dozen - at about 45 calories per cookie


    1/2 c. butter

    1/2 c. natural peanut butter

    1 egg, slightly beaten

    1/3 c. sugar-free maple syrup

    1 tsp. vanilla

    1 tbsp. liquid sweetener

    1 2/3 c. flour

    1/2 tsp. baking powder

    Mix dry ingredients, mix all others in order listed. Combine all ingredients. Roll one teaspoonful of dough into a ball, place on greased cookie sheet, flatten with a fork dipped in flour....continue until all dough is used. Bake in 350 degree oven for 8-10 minutes. Do not overbake.


    1/2 c. shortening

    4 or 5 pkgs. Sweet & Low

    1 pkg. sugar free butterscotch pudding

    1 egg, beaten

    1 1/2 c. flour

    1/2 tsp. salt

    1/2 tsp. baking soda

    1/4 tsp. baking powder

    6 tbsp. (approx.) warm water

    1 tsp. vanilla

    1 (7 oz.) sugar free carob chips (approx.)

    1/2 c. seedless raisins

    1/2 c. chopped nuts

    Mix shortening, sweetener, pudding and egg. Sift dry ingredients and add alternately with water. Add raisins, nuts and chips. Drop by spoonful onto ungreased cookie sheet. Bake at 375 degrees for 12 minutes.

    Yeah, don't go there---these things are no longer good for your grandmother to eat. Flour converts to sugar immediately and will sky rocket her blood sugar. Try a nice vegetable soup recipe. Different types of teas are also great. Good luck!
