Which frosting to use for lemon cupcakes?
I made cupcakes with some lemon cake mix. It's pretty lemony. I was thinking of making one of the following frostings. Which one would be best, and if you have a favorite recipe, please include it.
1) butter cream
2) vanilla
3) cream cheese
4) coconut
Just to mention, the cupcakes are mostly for me. These are all flavors which I like. If someone doesn't like the, more for me! :-)

I like all of your favorites, but cream cheese with a little orange added in would add a little zing. The recipe follows.
Orange Cream Cheese Icing
3oz. cream cheese, softened
2 tbs. butter, softened
1 tsp. orange zest
2 tbs fresh orange juice
2 1/2 cups confectioners sugar
Beat cream cheese, butter, orange zest and orange juice together until smooth then beat in confectioners sugar.
Just thought of something else. After you ice your cupcakes with the orange cream cheese icing what about sprinkling them with coconut.

2 c. sugar
1/2 c. shortening
1/2 c. milk
1/4 c. cocoa
1/8 c. white syrup
Put all ingredients in 2-quart kettle. Cook over low heat until rolling boil, stirring constantly. Time 1 minute once rolling boil. Remove from heat, cool to lukewarm. Hand beat. Put on cake.
If frosting appears sugared, beat with mixer, adding small amount of powdered sugar.

Try this old favorite, 7 Minute Frosting:
2 large egg whites
1 cup granulated sugar(7 ounces)
1/4 cup water
1 tablespoon fresh lemon juice(from 1 lemon)
1 tablespoon corn syrup
Combine all ingredients in bowl of standing mixer or large heatproof bowl and set over medium saucepan filled with 1 inch of barely simmering water (do not let bowl touch water). Cook, stirring constantly, until mixture registers 160 degrees on instant-read thermometer, 5 to 10 minutes. Remove bowl from heat and transfer mixture to standing mixer fitted with whisk attachment. Beat on medium speed until soft peaks form, about 5 minutes. Increase speed to medium-high and continue to beat until mixture has cooled to room temperature and stiff peaks form, 5 minutes longer. Using icing spatula, spread frosting on cupcakes. Serve.

i like the cream cheese. although you could do a white frosting and toast the coconut in the oven for a few minutes and sprinkle on top of the frosting. good luck and enjoy your cupcakes

Vanilla is too boring, so I wouldn't use it.
Coconut - some people don't like to eat coconut.
Some people don't like butter cream,
so I would choose cream cheese.

Cream cheese might be pretty good, but i was leaning toward the butter cream.
